Basic Pickles 


Brine:

2c. Water

2c. Distilled White Vinegar

2T. Kosher Salt

1t. Sugar


Veggies and Aromatics:

Cucumbers cut (spears of circles)

Garlic, 1 clove cut in thirds.

Black Pepper, fresh cracked ¼ tsp

Caraway seeds 1 tsp. (optional)

Dill, ¼ bunch (optional)


Method:

  • Pack the cucumbers in a Mason Jar with the garlic, dill, caraway and black pepper. Leave 1” of head space.

  • Bring the brine to a boil and then cool completely. 

  • Pour the cooled bring over the cucumbers in the jar, covering completely. 

  • Store in the refrigerator. Taste after the first 7-10 days. They will take a good 3-4 weeks to become completely pickled. Start using them when they have the flavor and texture that you like. Their flavor and texture will change over time.. They will last approximately 3 months from the time that they are pickled when stored in refrigeration.

Note: add jalapeno, caraway seeds, mustard seeds, or other aromatics that suit you. This brine can be applied to jalapenos, carrots, zucchini, cauliflower, etc; but adjust the aromatics as needed.
